My husband's birthday was last week and as usual I made his favorite treat, the beloved Knight family Sour Cream Coffee Cake. I was introduced to this amazingly moist cinnamon-sugar confection over 12 years ago - yeah, we've really been together that long! This recipe has been passed from family to family among the six Knight aunts and uncles and it has been a staple in our little family for years. Simple, sweet and scrumptious!

Batter Ingredients
3 C Bisquick or other generic baking mix
1 C sugar
4 Tbsp butter (melted)
2 Eggs
16 oz sour cream
2 Tps vanilla
Topping Ingredients
3/4 C flour
3/4 C sugar
1 Tsp cinnamon
6 Tbsp of butter (sliced)
1 C sugar
4 Tbsp butter (melted)
2 Eggs

Topping Ingredients

3/4 C sugar
1 Tsp cinnamon
6 Tbsp of butter (sliced)
Directions
1. Preheat oven to 350 degrees
2. Combine Bisquick, sugar, melted butter, eggs, sour cream and vanilla. Mix well until batter is whipped.
3. Pour into greased baking pan
4. Mix remaining ingredients in a separate bowl to make the topping
5. Shake evenly over the batter in pan till it is spread evenly
6. Place remaining 6 Tbsp of sliced pats of butter to rest on top of batter (make sure they are spaced somewhat evenly apart as they will melt and combine with the cinnamon dry mix to form a sweet crust)
7. Bake in oven for 30-35 minutes
